Cashew Cilantro Cheeze

This recipe was created by Ani Phyo, a raw food chef and writer. This cheeze is great on sandwiches or in wraps

Ingredients

  • 2 garlic cloves
  • ½ tsp sea salt
  • 1 cup cashews
  • 2-3 Tbsp fresh lemon juice
  • ¼ cup fresh cilantro leaves
  • ¼ cup water

Instructions

  1. Grind the garlic and salt in the processor until fine.
  2. Add remaining ingredients, except water, and blend until smooth. Add water as necessary to texture. Cheeze should be firm but smooth.
  3. Serve immediately with chips or store in the fridge for up to a week.

Yields about 1/2 cup
