Garbanzo Salad Sandwich Spread

This recipe is adapted from “Fat-free and Easy” by Jennifer Raymond.

Ingredients

  • 1 can cooked garbanzo beans, drained
  • 1 lg. celery stalk, finely sliced
  • 1 green onion, finely chopped, including green top
  • 1 Tbsp. fat-free Nayonaise
  • 2 tsp. stoneground mustard
  • 2 Tbsp. sweet pickle relish
  • ½ tsp. sea salt
  • 8 slices whole-wheat bread or 4 pieces pita bread
  • 4 lettuce leaves
  • 4 tomato slices

Instructions

  1. Mash the garbanzo beans with a fork or potato masher, or quick process in a food processor, leaving some chunks.
  2. Add the celery, green onion, Nayonaise, mustard and relish. Add salt to taste.
  3. Spread on whole-wheat bread or serve in pita bread with lettuce and sliced tomato.

Yields 4 sandwiches
