Chipotle Enchilada Sauce

This chunky tomato based sauce is tasty, slightly spicy and very easy to make.

Ingredients

  • 1 Tablespoon safflower oil
  • 4 cloves garlic, minced
  • 2 (15-ounce) cans tomato sauce
  • 1 (15-ounce) can diced fire roasted or Mexican style tomatoes
  • 1-2 teaspoons canned chipotle pepper, minced
  • 2 Tablespoons taco seasoning
  • 1 Tablespoon vegan imitation chicken broth powder
  • 2 teaspoons dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat a large sauté pan over medium heat. Add oil and garlic and sauté about 1 minute, taking care not to burn the garlic.
  2. Add all other ingredients, stirring until sauce begins to bubble.
  3. Lower heat and simmer 5-10 minutes or until thickened. Season with salt and pepper if desired.
  4. Use to top your favorite enchiladas or burritos. Enjoy!
