Garlic Broccoli Linguine

Whole wheat, brown rice or sprouted grain noodles can make for a quick, wholesome meal with a better nutritional profile.

Ingredients

  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 4 cups finely chopped broccoli
  • 2 Tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 8 ounces whole wheat or sprouted grain linguine, cooked according to package directions

Instructions

  1. In a large skillet, heat olive oil on medium-high until bubbling. Add garlic and cook until browned, about 5 minutes. Remove garlic from skillet.
  2. Lower heat to medium-low and add broccoli. Toss to coat in oil, cover, and let cook for 10 minutes. Add garlic and cook for another 5 minutes if desired.
  3. Add lemon juice, salt and pepper, and stir again to coat.
  4. Toss broccoli mixture with cooked pasta. Enjoy this simple dish as is, or garnish with pesto, red sauce, or grated cheese.
