Teriyaki Tofu

Ingredients

  • 2 blocks extra firm tofu, drained
  • 2 Tbsp. olive oil
  • 1 cup soy sauce
  • ½ cup water
  • ½ cup honey
  • 3 Tbsp. fresh ginger, grated
  • 1½ Tbsp. cornstarch
  • ¼ cup water
  • 2 Tbsp. sesame seeds, toasted

Instructions

  1. Preheat oven to 425 F.
  2. Break tofu into bite-sized pieces and place in a bowl.
  3. Sprinkle with olive oil and gently toss to coat.
  4. Place tofu on a baking sheet and bake for 15-20 minutes or until golden brown.
  5. Meanwhile, combine soy sauce, water, honey and ginger in a saucepan over medium heat. Bring to a simmer.
  6. Dissolve cornstarch in ¼ cup water and add to sauce. Stir until sauce begins to thicken. Remove from heat.
  7. Place baked tofu into a separate dish and cover with teriyaki sauce.
  8. Sprinkle with toasted sesame seeds.
